Tasting note
Rich, ripe nose, almost perfumed wine with a delicious creamy character on the palate and bags of soft ripe blackcurrant fruit. Acidity balanced against soft, full tannins and great structure and mouthfeel. Succulent, round and complex.
Viticulture
Sulcis’ sandy coastline is one of the few places where pre-phylloxera rootstock still thrives. Fine, wind-blown sand naturally prevents phylloxera from laying eggs. This red grape is produced only from alberello (bush) vines grown in sandy soils like Cantina Santadi’s.
Vinification
After destemming and crushing, grapes ferment and macerate for 12–14 days in stainless steel at 25-28°C with frequent pump-overs to extract Carignano’s tannins. After malolactic fermentation, the wine matures 10–12 months in first- and second-use French oak, then several months in bottle to refine aroma, flavour and bouquet.

The best accompaniment to this wine, try any one of these: teriyaki pork chops and Thai vegetables, pan-seared filet mignon with roasted potatoes and Merlot sauce or a grilled sirloin steak with anise- basil butter.
