Palomino

The backbone of Spain’s Sherry wines, Palomino is a neutral, low-acid white grape that excels in oxidative aging. On its own, it produces light, delicate wines with subtle almond, apple, and saline notes. However, when aged under flor yeast, it transforms into the complex, nutty, and briny Fino and Manzanilla styles. In oxidative styles like Amontillado and Oloroso, it develops deep, rich layers of caramel, dried fruit, and spice. While rarely exciting as a still wine, in fortified expressions, Palomino achieves remarkable depth and longevity, making it essential to the winemaking heritage of Jerez.
