Tasting note
Rich, dry Oloroso sherry, brimming with dried fruit and nuts, with a savoury concentration and a lasting hit of smoked wood and bitter chocolate.
Viticulture
Carrascal vineyard: Palomino Fino, 15-20 years old, density 4,000vines/ha. Traditional 'stick and thumb' pruning, south-facing for sea breezes that cool and humidify vines.
Vinification
Hand-harvested grapes, pressed, and fermented at 25°C for 12 days. Selected for exceptional quality, fortified to 20%, aged for 15 years in our special solera and criadera system.
Food Match
Ideal with Patés, especially game patés, smoked duck and other smoked meats and aged manchego.
