Tasting note
Cherry in colour and cherry in flavour, this is a stylish and generous Beaujolais, full of red stone fruit and blithely untroubled by tannin.
Viticulture
Pierre-Marie Chermette took over his family domaine in 1982, reviving Beaujolais traditions with a modern cellar approach. Rejecting the region’s high yields, he favors lower yields for riper grapes and natural balance, achieving higher sugar levels and eliminating the need for chaptalization.
Vinification
Chermette uses natural yeasts which confer a character of red fruits to the wine rather than the artificially prepared yeasts which lend the famous, but not such attractive character of bubble gum and banana.
Food Match
An everyday drinking styled wine with ripe juicy flavours would match nicely with one of the following: smoked salmon horseradish mousse, roasted sea bass with tomato coulis and fennel salsa, five-spice pork and green bean stir-fry and warm jasmine
