Viticulture
2019 began well, with plenty of sunshine and the hottest Easter bank holiday on record. A warm, wet summer increased disease pressure during ripening, but careful vineyard work ensured quality fruit. Yields were good, with clean, healthy grapes showing excellent natural sugar and flavour concentration.
Vinification
A unique traditional-method sparkling wine from hand-picked Bacchus and Pinot Gris. Whole-bunch pressed, cool-fermented in stainless steel, then briefly rested on lees to preserve freshness and aromas. It aged a further 12 months on lees in bottle before disgorging.
