Subtle and complex, this wine has nuts, citrus, flint, green apples and blossom on the nose. Complex, with a core of fruit supplemented by savoury bread flavours. Green apples, quince, honey, lemons, pear skins mingle with nuts, spice and a touch of flint. Assertive mousse and a bold green apple and honeysuckle finish. 96/100 Decanter World Wine Awards 2022
Viticulture
The grapes were hand harvested with the ultimate in care from the Hampshire vineyards.
Vinification
Hand-harvested grapes, whole bunch pressed for top-quality juice. 15% barrel-fermented in old white Burgundy barrels, partial malolactic fermentation to soften acidity. 37% reserve wines added for signature style. Aged 4 years on lees, disgorged with 3 g/L dosage.
