Tasting note
Delicate sparkling wine from Hampshire, shot through with red fruit and summer pudding, with a heady perfume of sourdough.
Viticulture
The 2015 growing season was a test of good site selection and our vineyard did a wonderful job in challenging conditions - the summer was cooler than the previous year, particularly in August which is the crucial month at the start of the ripening season. The pinots were super-ripe with wonderful flavours, good acidity levels and a deep colour.
Vinification
This Blanc de Noirs harmoniously blends Pinot Noir, Pinot Meunier, and Chardonnay. Hand-harvested, gently pressed, and cool-fermented in stainless steel tanks to preserve vibrant fruit. 5% aged in old white Burgundy barrels. Partial malolactic fermentation for a creamy texture. Aged 3 years on lees, then riddled and disgorged with an 8g/L dosage.
