Tasting note
Spicy and aromatic on the nose with red fruits and damsons. This medium-bodied, soft wine balances rich blackberry and morello cherry flavours with a supple, rounded finish and a touch of liquorice.
Viticulture
The vineyards are situated around Piemonte, on mid to high altitude sites with good exposure and a high content of clayey and calcareous marl soils.
Vinification
Fermented in stainless steel tanks on the skins at 28–30°C, the wine undergoes malolactic fermentation after 7–8 days. Once fully complete, it is transferred into large, used barrels to age for nine months before final bottling.
Food Match
Excellent with pasta, particularly with a cheese based sauce, or meaty pizzas and pan fried or barbecued red meat.
