Tasting note
Aromatic Spanish white, wafting cinnamon and herbs into the nostrils and quince and red apple into the mouth.
Viticulture
Albillo Real is a recovered variety that was commonly found in Castilla-La Mancha and neighboring provinces to the north before the phylloxera epidemic. A very low-yielding, drought-resistant , and short-cycle variety, it is one of the first to be harvested in the region.
Vinification
A small percentage of the wine is aged in 600-liter French oak barrels, and the rest, as our ancestors did, in 300-arroba (approximately 5,000-liter) clay amphorae.
