Tasting note
Expressive aromas of quince and rose petals, spritzed with grapefruit zest and bitter orange. On the palate, there's a whisper of tea-like tannin from the long maceration of the grape skins, balanced by an abundance of flavour and a long, complex finish.
Viticulture
Double Guyot vine training. The grapes come from small parcels in Ottella estate, all close to Lake Garda, harvested very late, around the end of October.
Vinification
A limited edition, skin-contact white, made in the manner of yesteryear, without mechanical help, hence the name: no machines whirring, just silence. Estate-grown Turbiana, from vineyard plots close to Lake Garda, is harvested late (end October), and then vinified like a red wine, with a month-long skin maceration, followed by mellowing in clay amphoras.
Food Match
Such a unique wine rewards experimentation. Try it with cod fillet with a citrus dressing, Pad Thai, or creamier curries like korma or pasanda.
