País

One of South America’s oldest grape varieties, Pais (also known as Mission or Criolla Chica) is light, rustic, and brimming with red berries, dried herbs, and floral notes. Once dismissed as simple, it is now being revived in Chile for its bright acidity and easy-drinking charm. Naturally low in tannins, it produces fresh, juicy wines with a slight earthiness. Some versions are made using carbonic maceration, enhancing its fruit-forward appeal. Though often enjoyed young, old-vine expressions can carry surprising depth and texture. Best served slightly chilled, Pais is a vibrant, historical grape full of rustic charm.
