Best known as the grape behind Gavi, Cortese produces crisp, mineral-driven white wines with bright acidity and elegant citrus and floral aromas. Notes of lemon, green apple, and almond define its profile, often with a slight saline edge from its northern Italian terroir. Though typically vinified in a fresh, unoaked style, some producers experiment with barrel aging to enhance texture and complexity. Naturally structured and refreshing, it pairs exceptionally well with seafood and light dishes.
