Tasting note
From the estate's best and oldest vines comes this stunning Condrieu, dizzyingly perfumed with violet and spice, the palate a velvety mouthful of apricots.
Viticulture
From the estate’s oldest vines on south/southeast-facing terraces overlooking Chavanay, “Les Chaillets” refers to these terraces. Planted on muscovite-rich granite soils, Viognier vines grow at high density (8,000–10,000/ha). No insecticides or pesticides are used; only organic fertiliser, with careful yield and vigour control for perfect ripeness.
Vinification
The grapes are hand-picked at full ripeness and carefully sorted before pressing. Fermentation, both alcoholic and malolactic, occurs in barriques using native yeasts. The wine then matures for nine months in the same barrels on its lees, without racking, and is regularly stirred to enhance texture and complexity.
