Tasting note
Clear, bright, golden yellow in colour. The nose opens with an intense bouquet of white flowers and boxwood flowers, followed by notes of exotic fruit, pineapple and passion fruit in particular. In the mouth it is fresh and mineral: a wine of good structure which lingers.

An elegant and structured organic white wine from an almost lost ancient grape variety from Piemonte: Timorasso.
Vinification
Manual harvest around the beginning of september. Grape is desteemed and softly pressed. Fermentation in stell tanks at controlled temperature (12-15°C). Malolactic fermentation not done. Maturation for 10 months in concrete tanks on its lees. Batonnage. Bottle aging around 3 months.
