Tasting note
Classic Sauvignon Blanc with bright pink grapefruit, citrus and Lantana aromas. Zesty, intense palate of lemon and lime with lifted tropical notes. A mouth watering and refreshing aperitif.
Viticulture
This vineyard, planted in 2001, just east of Hahndorf is in its own ‘mini’ valley, creating a chilly mico-climate, highly suitable and very desirable for producing quality Sauvignon Blanc. Sustainable Vineyard practices only.
Vinification
Picked in cool of the early morning, pressed immediately and left to settle in Stainless steel tank at 10 degrees. Lees stirring to enhance tropical characters over 3 days before juice warmed to 16 degrees for temperature controlled 7 day fermentation. Raked off gross lees and settled with bentonite before pre bottling filtration by cross flow.
