Spicy, berry-filled Sangiovese, perfumed with roses, violets and potpourri, followed by a mouthful of blackcurrants.

Vineyard

Hills and Plains in Romagna, from 0 to 150m. Soil type is limestone and clay. In Emilia Romagna Along the Adriatic coast, the sea moderates the climate: winters are milder, summers are slightly less hot, and temperature fluctuations are smaller. In the Apennines, the climate is cooler and wetter: temperate-humid at mid-altitudes, and cold in the higher mountains.

Viticulture

Vineyards lie in the hills between Forlì and Faenza, Romagna, at 100-400 m altitude. Medium-textured clay soils with south-east exposure support 4,500 vines/ha, trained by Guyot and spurred cordon. Yields average 12,000 kg/ha. Grapes are hand-harvested in small crates during the second half of September.

Vinification

After traditional pressing, the juice ferments in 200-600L tanks at 24-26°C for 10 days, with 8 days on the skins. After malolactic fermentation, the wine is stored in tank to preserve its primary fruit aromas, resulting in a fragrant wine with an appealing, expressive nose.

Food Match

Tagliatelle with Bolognese ragù, cappelletti or tortellini in broth and as second courses roasted white meats such as rabbit or chicken, duck breast, or a classic slice of beef.
