Tasting note
Elegant and expressive, with aromas of ripe black cherry, juicy plum and wild berries, complemented by delicate notes of Mediterranean herbs, sweet spice and a subtle earthy nuance. The palate is smooth and beautifully balanced, combining generous dark fruit with supple tannins, fresh acidity and a savoury finish. A refined Sicilian red with warmth, depth and understated complexity.
Viticulture
Organically cultivated Nero d’Avola and Merlot grow at 40-70 metres in Noto, Sicily, on pale limestone marl soils. Guyot and spur-pruned cordon systems are used, with cover crops and natural vineyard treatments supporting soil vitality and biodiversity.
Vinification
Hand-harvested grapes are destemmed and crushed, then fermented with 14 days of skin maceration at around 25°C. Malolactic fermentation takes place in stainless steel, followed by approximately 10 months of ageing in second- and third-use French oak barriques, integrating structure while preserving the fruit.
Food Match
A red wine of great conviviality, and easily matched with contrasting flavours. Seasoned meats, mature cheeses; salami; grilled meat; sweet-sour dishes. Even with artichokes.
