Tasting note
Elegant and aromatic, with delicate notes of jasmine, rose petals and orange blossom, lifted by pink grapefruit, mandarin zest and a subtle sea-breeze character. The palate is dry, fresh and beautifully poised, balancing expressive floral aromatics with bright citrus, gentle texture and a savoury mineral finish. Modern, distinctive and refined, with a clean, refreshing finish.
Viticulture
100% Moscato Bianco grown organically at 40 metres in Noto, south-eastern Sicily. Guyot-trained vines thrive in pale calcareous marl soils with clay and abundant stones. Sustainable vineyard practices promote soil biodiversity, while hand-harvesting in August preserves freshness and aromatic purity.
Vinification
Hand-harvested grapes are chilled overnight at 8-10°C, carefully selected, destemmed and gently pressed. The must is cold-settled before fermentation in stainless steel at 15°C for 20-25 days. The wine rests on fine lees with weekly stirring for around four months, preserving aromatic intensity, texture and freshness.
Food Match
This wine's fragrant aromas enhance soft-savoury seafood notes. Enjoy it with herring or Caprese salad, breaded prawns, shellfish or tomato lobster cream. It also exalts Valencian paella, fish couscous or sea urchin pasta.
