Tasting note
Aromatic and fresh Australian Pinot Grigio, delicious and refreshing. Honeysuckle, stone fruit and pear flavours on the palate, with a delightful acid backbone and lingering finish.
Viticulture
Duxton Vineyards farms 2,334 hectares of vines—the second largest in Australia—producing about 70,000 tonnes of grapes each year, around 5% of national output. The company applies regenerative farming to reduce agriculture’s environmental impact, improving soil health and biodiversity, with the same care reflected in the crafting of this wine.
Vinification
Fruit was harvested early in the morning to avoid the heat. It was cold pressed and once the juice had naturally settled it was racked then fermented cool (12°C) for the next 12 days.
Food Match
Grilled barramundi, or other strong fleshed fish. alternatively great with a Thai salad.
