Vineyard
Sauvignon Blanc hails from Elgin, a cool region famed for crisp fruit expression. Sun-kissed Semillon bunches, from our Devon Valley farm, were hand-harvested adding weight, texture and depth of fruit expression to the final blend.
Viticulture
Grapes sourced from the cool-climate Elgin Valley. Precision viticulture and careful canopy management ensure slow ripening for optimal flavour development and natural acidity.
Vinification
Fruit was cooled to 5°C overnight. One-third spent 12 hours on skins before a long, cool fermentation in tank.A small Semillon portion was barrel-fermented in seasoned French oak for added richness.
