Tasting note
Fresh and expressive, with aromas of white peach, ripe citrus and wild flowers, layered with hints of Mediterranean herbs and almond. The palate is crisp yet textured, offering juicy orchard fruit, vibrant acidity and a distinctive saline minerality, finishing long, elegant and refreshingly savoury.
Viticulture
Pigato is Liguria's distinctive biotype of Vermentino, recognised for its small, golden-speckled berries and naturally concentrated flavours. Grown on steep coastal vineyards overlooking the Ligurian Sea, the vines benefit from mineral-rich soils, sunshine and cooling sea breezes, producing wines of freshness, aromatic intensity and saline minerality.
Vinification
limiting the contact of must and marc to several hours to obtain the fragrances typical of the grape skins and a moderately deep colour; • controlling must fermentation with the aid of a refrigerator to keep temperature at approximately 20°C, thus enhancing and preserving the variety's typical features.
Food Match
Pairs exceptionally well with burrata and anchovies, octopus' salad and seabass.
