Viticulture
From hand selected grapes grown on our own vines from our estate in Appledore, Kent. Vines are pruned single or double guyot depending on block. Vines for this wine are all Burgundian clones.
Vinification
100% whole bunch pressed. Fermentation at cellar temperature in 228l barriques and 500l puncheons. 9 months barrel ageing in French oak, 16% new and 84% old.
Food Match
Dressed crab, scallop ceviche or try langoustines in a lemon butter sauce.
