Tasting note
Elegant and beautifully structured, with aromas of ripe red cherry, wild strawberry and rose petals, layered with notes of liquorice, tobacco, sweet spice and crushed stone. The palate is refined and powerful, with firm yet polished tannins, vibrant acidity and a long, savoury finish with remarkable freshness.
Viticulture
Organically grown Nebbiolo comes from Fontanafredda’s estate vineyards in Serralunga d’Alba, where calcareous marl soils, warm days and cool nights promote slow, even ripening. Sustainable vineyard practices and low yields produce grapes with exceptional concentration, vibrant acidity and the structure required for long ageing.
Vinification
Hand-harvested organic Nebbiolo grapes undergo temperature-controlled fermentation with an extended skin maceration to extract colour, aroma and fine tannins. The wine is matured in large oak casks before further bottle ageing, allowing its structure to soften while developing complexity, elegance and the classic character of Barolo.
Food Match
Juicy and spicy and asking to be paired with robust flavours. Think truffles with risotto or strong, hard cheese.
