Tasting note
This exquisite Piemontese sparkling wine has bright citrus, apple and baking bread aromas and flavours, delicate bubbles and superb finesse. Delicious.
Vinification
The process is traditional, following the classic bottle-fermented method. Gentle pressing yields 50-52% must, fermented at 12°C. Bottled in spring post-harvest, with added yeast and 22g/l sugar, the wine ages three years to develop its bouquet. Contessa Rosa becomes 'Brut' with a final liqueur addition, rounding its taste and softening its fragrance.
Food Match
It makes for an excellent aperitif, but is above-all - on account of its personality and pleasing taste - a perfect way to accompany all dishes with class.
