Tasting note
Its aromatic richness is dominated by red fruits and floral notes. The oak ageing appears in classic form, with descriptors that remind us mainly of spices. On the palate it has a smooth entry, with tannins that give us the characteristic chalky notes.
Viticulture
The training system is vertical shoot position. The age of vineyards is 26 years. The density is 3.300 to 7.700 plants per hectare.
Vinification
The grapes are harvested by hand. Alcoholic fermentation is carried out at 26°C for 12 days. The starter culture is a mix of yeasts (Torulaspora, Kluyveromyces and Saccharomyces cerevicie). Classic production with a maceration of 21 days in total. Vinification occurs in small cconcrete vessels, with 20% whole bunch. Malolactic Fermentation is 100%.
Food Match
Ideal to drink with goat cheese board, contains roasted beef, humita, roasted vegetables, pears in Malbec reduction.
