Tasting note
Brilliant and intense purple red. Fresh and clean. Fragrant waves of small red berries, dark cherry and ripe red grape. Fleshy and plump, the fruity aspect fills the mouth together with a lovely and balsamic acidity.
Viticulture
Sangiovese 100% from Fattoria dei Barbi vineyards in Montalcino. Vines planted in 1997 on skeletal marl soils rich in schist, south-facing at 450 m a.s.l. Trained in cordone libero with 5,128 vines/ha. Average yield 65 ql/ha. Conditions favour balanced ripening and structure typical of high-elevation Montalcino Sangiovese expression aim.
Vinification
Hand-harvested grapes were cooled with dry ice to prevent oxidation, then sorted by Pellenc selector to remove leaves, stems and unripe berries. Fermentation took place in oxygen-free Ganymede vats with CO2-assisted remontage. Bottled in March without oxygen using organic corks treated against Brettanomyces No chemicals used during bottling stage.
Food Match
Ideal as an aperitive, even slightly cool. Recommended to have with fresh string cheeses and charcutier. Excellent also with grilled vegetables. Serve at a temperature of 18°C.
