Tasting note
SENSORY ANALYSIS. COLOUR: brilliant and intense purple red. BOUQUET: fresh and clean. Fragrant waves of small red berries, dark cherry and ripe red grape. TASTE: fleshy and plumpy, the fruity aspect fills the mouth together with a lovely and balsamic acidity.
In the press
90/100 - Kirsch, wild strawberries, hibiscus and licorice on the nose that follow through to a medium-bodied palate. Approachable, fruity finish with some strawberries at the end. Drink now.
Vinification
Organic grapes are handpicked at perfect maturity, destemmed and pressed gently to avoid breaking the skins. They then undergo prolonged maceration during fermentation, to encourage extraction of antioxidants, making sulphur addition unnecessary. Selected yeast strains are also used, to minimise fermentation by-product sulphite production.
Food Match
PAIRING: ideal as an aperitive, even slightly cool. Reccommended to have with fresh string cheeses and charcutrie. Excellent also with grilled vegetables. SERVING TEMPERATURE: Serve at a temperature of 18°C.
