Tasting note
Ripe peach on the nose meets dried apricot in the mouth: a double dash of fruit-driven perfume, blended with honey.
Viticulture
The vines are grown without pesticides or insecticides and manure is natural. The land is worked without herbicide to maintain ventilation and flexibility to the soil. Yield of 50 hl/ha.
Vinification
Harvest is by hand and the grapes are transported in small wooden crates in order to reduce bruising. After de-stemming they are gently crushed in a pneumatic press and fermented at a cool, controlled temperature in stainless steel. Ageing is in barrels for 6 months, 25% of which are new, and batonnage is performed regularly. Only 5000 bottles made annually.
Food Match
Will compliment fish in rich sauces, pasta and white meat such as pork loin with an apricot stuffing, quail or goose.
