Apples and orange blossom wash the tongue while the nose is seduced by flowers, lemon and lime…heady South Australian Riesling.
Viticulture
Michael Noack’s vineyard sits outside Springton in the southern Eden Valley. Planted in 1973, its Riesling vines grow on an east-facing slope cooled by prevailing breezes. Low-nutrient, well-draining quartz gravel soils keep the site fresh and disease free. GPS: 34°42'06.5"S 139°05'03.4"E.
Vinification
Machine harvested with a few hours of skin contact to build phenolic body. Cold fermented in a temperature controlled inox fermenter using a combination of indigenous and selected yeasts to develop and protect delicate aromas. As a stylistic choice, no fining agents are used throughout the winemaking process and only minimal SO2 is added prior to bottling.

A versatile wine to try with chicken pad thai or a fish-finger sandwich with lashings of tartare sauce.
