Tasting note
A rich, full-bodied Chardonnay made in Alto Valle del Río Negro, Patagonia by genius winemaker, Elias López. The vines were planted in 2002, and at 39˚ South, the climate is cool: leading to vibrant citrus flavours, and 11 months' ageing in 500 litre barrels brings additional nuances of vanilla, butter and caramel.
In the press
The subtle and fresh white 2019 Verum Soul D. Chardonnay is only 13% alcohol and was produced with grapes from shaded vines planted 20 years ago on stony soils. This fermented in 500-litre oak barrels with indigenous yeasts where it matured with lees for 11 months, but the wine is not oaky or leesy at all. It's transparent and pure with a sense of freshness and balance that I like very much. It finishes dry and with a salty note. Excellent. Drink 2021-2024.
Viticulture
Clay-rich soils with lots of gravel that produce aromatic and concentrated grapes. Clay loam soil with rock sedimentation from the Andes. Groundwater very close to the roots. Vineyards planted in 2002, southern hemisphere, latitude -39, at a low altitude, abundant water, wide temperature range and constant winds.
Vinification
Manual harvest, followed by destemming and pressing. Static racking off the gross lees, into new 500 litre barrels . Minimal intervention in the cellar: fermentation with indigenous yeast and 11 months' ageing in barrels on the fine lees before bottling without filtration.
