Tasting note
Seamlessly silky in texture, with succulent black cherry and liquorice character, and complex balsamic notes alongside hints of allspice, Mediterranean wild thyme, rosemary and mint. Beautifully-balanced and pure, it lingers long on the palate and makes for delicious drinking now and over the next several years.
In the press
This Cencibel (Tempranillo) is category defining, displaying intense blueberry fruit and sweet, succulent tannins… everything good viticulture is capable of delivering in La Mancha. The fruit comes from vines planted near Tomelloso in 1956 at 720 metres and is aged for ten months in amphora. The wine is perfectly ripe with a touch of creaminess and lively acidity. Viticulture
Organic. Limestone shallow, rocky soil, pebbles. Low bushes planted in 1956, no irrigation.
Vinification
60+ year-old bush vines farmed organically on shallow rocky soil over limestone. Careful fruit selection, fermented in stainless steel vats, then transferred to ancestral 4,500L clay jars for 10 months' maturation. Aged for a further 36 months in bottle prior to release. No fining or filtration, so a natural sediment may develop over time.
Food Match
This is a silky red wine with a remarkable acidity that matches perfectly well both with white and red meats or fatty fishes such as tuna and cod. It is also good with pasta and meat sauce dishes.
