Tasting note
Graciano is a highly perfumed, unfairly unfamiliar Spanish grape variety; here it wafts violets, lavender, cocoa and Mediterranean herbs into the nostrils and covers the tongue with black fruit.
In the press
Bright and pure purple fruit on the nose with attractive, new oak aromas of vanilla. On the palate, this is sumptuous and rich with generous, fleshy fruit. Very pure and expressive.

Vinification
Ulterior wines are handpicked & crafted using ancient methods. Grapes are destemmed, crushed, & fermented in steel tanks. After malolactic fermentation in old barrels:10% ages in new French barrels & 90% in clay tanks for 8 months. Bottled after 12 months, unfiltered. Minimal sulfur used.
