Tasting note
Clean, bright, with a yellow-straw colour and green highlights. Medium-high intensity on the nose. Citrus aromas of lime and white pip fruits stand out. Fresh and mineral. Good entrance on the palate, dense and well-balanced. Long and fruity aftertaste.
Vineyard
Our vineyards are small plots of land, because of our traditional inheritance system, parents divided their land to give a piece to each one of their children Another characteristic trait is the trellis system (emparrado), where vines are horizontally trained. This is the best system for the grapes because by hanging horizontally, they escape from the soils humidity from the frequent showers, while the Atlantic breezes keep the grapes nice and dry. This also allows them to get more sun exposure
Viticulture
Teledetection to classify vineyards and produce different profile wines.
Vinification
Manual harvest in 20 kg crates. Destemming and subtle grape pressing at 1kg. Alcoholic fermentation between 16-18ºC. Partial malolactic fermentation. Transfers and resting. Coupages. Proteic stabilization. Tartaric stabilization and filtering. Bottling.
