Tasting note
Reminiscent of a fresh Atlantic breeze, with saltiness pervading the intense, elegant aromas of fresh herbs, green apples, lemon and grapefruit. On the palate, it is bright and refreshing, satisfying roundness of texture, and a light pétillance that gives a vivacious sense of freshness.
Vinification
Grapes are harvested manually into small (20kg) crates. Destemming of the fruit is followed by gentle pressing at 1 bar. Temperature-controlled alcoholic fermentation between 16ºC and 18ºC, followed by partial malolactic conversion, resting, coupage, proteic and tartaric stabilization, filtering and bottling.
