Vinification

Crafted from Corvina and Rondinella grapes grown on Villa Novare's Valpolicella Classica slopes. Guyot-trained vines at 5,000/ha density. Handpicked bunches, dried on cane mats for 120 days. Sugars reach 17% potential alcohol. Crushed in mid-January, cooled, and fermented for 50 days. Velvety palate. No modern tech used—terroir-driven.
