Tasting note

Silky Amarone, the rich, textured dry red of the Veneto, like a savoury port, with flavours of prunes and Morello cherries and a heady bouquet of nuts, tobacco, dried flowers and sweet spices.

In the press

97/100 - Comforting aromas of dusty wood, dried red fruits, dark chocolate and some subtle floral lift lead to a superbly textural and airy palate which gives energy and space to the concentrated red and black fruits. Breezy and fragrant, lifted and poised, it's a masterclass of harmony and elegance, with a lovely salty edge and some crunchy berries. The complexity will come with time. Drink 2025-2050

Viticulture

Grape varieties: 80% Corvina Veronese, 20% Rondinella. The vertical-trellised vines are Guyot trained with a density of 5000 vines/ha. Grapes are sourced from Tenuta Novare in Arbizzano di Negrar, Valpolicella Classica, known for its calcareous-marl soils and dedicated to Amarone production.

Vinification

The grapes are hand-harvested in early September, then dried on bamboo racks for about 4months to enhance their aromatic profile. In mid-Jan they are destemmed, crushed, and undergo maceration at 4-5°C for 20days, followed by a 30-day fermentation in concrete at 18°C. Ages in Slavonian oak barrels for 6years and matures in the bottle for at least 12 months.

Food Match

Roasted Lambs and vegetables with wild herbs, slow cooked stews or pure dark chocolate.
