This Pinot Noir fruit is hand picked from specially selected Burgundy clones
Vinification
Fermentation in stainless steel before a full malolactic ferment. 20% aged in new French and Amrican Oak barrels for 3 months.

A brilliant match with pheasant, partridge, game and roast Romney lamb.
