Tasting note
Crushed mulberry, blackberry and plum flavours with well judged oak maturation, adding layers of sweet spice, vanilla and dark chocolate. Succulent black fruit with a savoury edge of cigar box and graphite, all held together beautifully with smooth tannins and a tightly knit structure.
Unique Selling Point
Babel is a blend of all the white cultivars grown on the estate at Babylonstoren.
Viticulture
On the slopes of the Simonsberg Mountain the heart of the wine-growing areas of Franschhoek, Stellenbosch and Paarl, Western Cape, South Africa. Klapmuts/Longlands type soils of Malmesbury shale origin as well as Oakleaf and Hutton type soils of Cape granite origin.
Vinification
Cultivars were harvested, fermented and made separately. Skin fermentation lasted around seven days, followed by a one-week extended maceration. The wine was pressed to French oak: 20% new and 70% second/third-fill 300L barrels, plus 10% 4,200L foudres. After malolactic fermentation, it matured 12 months before bottling.
Food Match
Youthful and vibrant with enough depth to hold its own in the company of slow-cooked game or oxtail stew, barbecued boerewors, grilled lamb chops with rosemary or lightly spiced pulled pork shoulder.
