Tasting note
Nebbiolo, the grape that makes Barolo and Barbaresco such heady delights, is still delightful when grown elsewhere in Piedmont; this velvety wine emits scents of violet and rose and then scatters their petals across the tongue.
Vinification
From vineyards at Rivalta, between La Morra and Verduno, bunches are harvested in early October, and stems are removed immediately upon arrival at the cellar, since Nebbiolo does not need any help with tannin levels. Fermentation is at 28°C and completes in about nine days.
Food Match
Excellent with “Haute Cuisine” dishes with red and white sauces. Delicious with fondue.
