Vinification
The hand-harvested Pinot Noir grapes from the cool maritime-influenced Las Brisas vineyard are destemmed and typically undergo a cold soak followed by controlled fermentation with gentle punch-downs, before being partially aged for 10 months in French oak barrels to preserve vibrant red fruit character and structural freshness.
