Tasting note
Chilean Riesling, scented with crushed apples, mangoes and guavas, lifted by a note of acidity on the finish.
Vinification
Hand-harvested into small, 15 Kg bins, lightly crushed and then cold-macerated in the pneumatic press for a few hours before gentle pressing. Juice naturally clarified, inoculated with selected yeast, fermentation in stainless steel for 20 days at 15°C. Held on fine lees for five months before protein and tartaric stabilisation and bottling.
Food Match
Excellent with grilled or boiled fish, fish soup or even spicy dishes.
