Tasting note
Rich and intensely fruity, with aromas of ripe black cherry, blackberry and plum, layered with hints of violet, sweet spice and cocoa. The palate is smooth and velvety, offering juicy dark fruit, soft tannins and balanced freshness, finishing long and elegantly.
Viticulture
The vineyards lie in the province of Taranto, at altitudes of 100-150 metres above sea level. Warm Mediterranean sunshine is tempered by cooling Adriatic and Ionian breezes, while limestone and clay soils encourage balanced vine growth. These conditions promote slow, even ripening, producing healthy grapes with excellent concentration and freshness.
Vinification
Vinification by maceration at controlled temperatures of 24-28 degrees. After malolactic fermentation the wine is breifly aged in the bottle.
Food Match
Excellent with Pizza, Pasta and Aged Cheese
