Tasting note
Toku is almost transparent with pale gold hues from its extended cold aging. Vibrant aromas of grapefruit, pomelo, green apple, and pear are balanced by richer notes of pineapple, plum, apricot, and honeydew melon, with creamy umami and toffee undertones. On the palate, it offers bright freshness, velvety texture, medium+ body, and a complex, evolving finish
Vinification
Rice is polished to 35%, ensuring a clean, refined flavour. Brewed at Takasago Shuzo in Asahikawa, Hokaido. Known as the coldest city in Japan. This is fermented with external temperatures reaching -20oC. Yes. – (minus) 20oC. Fresh spring water from the Daisetsuzan mountain range is the final ingredient.
