Tasting note
A deeper, more intense hue than a traditional pale rosé, achieved by leaving the Pinot Noir grapes on their skins for an extended period and increasing the skin-to-juice ratio. Noticeably textured and weightier on the palate due to a harder press during winemaking. Softer and less acid-driven than typical fresh rosés, offering a rounded and approachable mouthfeel.
Unique Selling Point
the heretics met 24 year old, Japanese sommelier Momoka Mitake through the wine trade, and it turned out she is an artist too so they had to get her to design this label. They loved her name so much, they named the wine after her.
Viticulture
Hand harvested from premium Crouch Valley vineyards.
Vinification
Hand-harvested grapes were whole-bunch pressed, then 92% was fermented in old Burgundy barrels and the remaining 8% went into a third fill Damy Puncheon. The wine stayed in barrel for 6 months before being bottled. 8% went through Malolactic
