Tasting note
Here 'Syrah' reveals its Rhône-like freshness and finesse, setting it apart from 'Shiraz.' Inky black, with soaring damson, loganberry and Chinese five spice aromas, followed by marzipan and cherry kernel notes. Underlying power akin to raw meat, true to Syrah's nature. Palate surprises with silky smoothness concealing depth and density. Freshness, sophistication, balance and persistence define this Swinney creation. Oak nuances subtly integrated.
Viticulture
Vines are dry grown using organic principles.
Vinification
Fruit hand-picked from 21-year-old Syrah vines, sorted and crushed into small open-top fermenters. 5% whole bunches, wild fermentation for structure, texture, and opulent spice. 2 weeks on skins, pressed to fine French oak (40% new). Aged 14 months before bottling. Crafted with minimal sulphites and gentle filtration, capturing Syrah's essence.
Food Match
One dish that always works well is Beef Brasato with Pappardelle, a dish that works well with either braised Beef or Oxtail.
