Tasting note
On the nose, whortleberry, aronia and purple grape at first; revealing nuances of clove, star anise, stargazer lily, musk, leather and iron as it opens in the glass. In the mouth, it is super-refined: intense and concentrated in flavour, while having gorgeous soft succulence of texture.
Viticulture
The Farvie vineyards sit on ironstone gravel hilltops above the Frankland River, crafting wines with a signature, high-quality ferrous character. Swinney's passion for bush vine viticulture delivers deeply site-specific fruit. Though hand-tending these low-yielding vines is labor-intensive and demands intense patience, the exceptional quality is worth it.
Vinification
Hand-picked from 21-year-old Frankland River Syrah vines on ironstone gravel, the fruit was gravity-fed to a French oak vat and demi-muids. Featuring 55% whole-bunch wild fermentation for bright, spicy aromas, it spent 11 days on skins, was basket-pressed to large French oak (35% new), and aged 11 months before minimal-sulphite bottling.
Food Match
A bold, spice-driven wine like this stands up to intense slow-roasted barbecue pork shoulder. Seasoning the rich, umami-driven meat with pepper and cumin works beautifully to draw out and amplify the wine's vibrant fruitiness.
