Tasting note
Medium magenta hue. Rusty and ferrous notes intertwine with dark cherries, white pepper, boiled lollies, and lavender aromas. Medium to full-bodied, it exhibits tight, fine tannins framing red and blue fruits, aniseed, and black pudding flavors. Lively, ethereal, and impressively long.
Viticulture
This fruit was from a small selection of our dry grown bush vine Mourvèdre, based on soil type. This section within the vineyard has leaner top soils with a higher percentage of lateritic gravel. Multiple fruit thinning and selective hand harvesting over multiple passes ensures we achieve as close to perfect fruit as possible.
Vinification
Fruit hand-picked, gravity-fed to French oak demi muids. 100% whole bunches, wild fermentation for structure and bright aromatics. 11 days on skins with late foot stomping. Aged 11 months in a 600L four-year-old French oak demi muid. Minimal sulfites, unfined, and lightly filtered.
