Tasting note
This delicious combination of Pinot Noir and Meunier smells like Chambolle Musigny, with its subtle and complex aromas of rosehips, wood ash, pine pitch and a hint of herbaceousness. On the palate, it has fine tannins and is delicate, elegant, soft and succulent, with beautifully spiced Pinot perfume, and hints of lilies and clove.
Vinification
The grapes undergo cold maceration for three days to extract fruity, floral and spicy notes, before warming up for fermentation with wild yeasts. Pressed into tank, settled overnight, then racked off to older French oak puncheons, from the Francois Freres and Ermitage cooperages, for six months ageing on fine lees.
Food Match
A classic pairing would be a charcuterie board, but this would also be perfect with a Mediterranean-style salad with feta and pomegranate seeds.
