Tasting note
Vibrant cool-climate Chardonnay from Tasmania, aromatic with lemon zest, flint and hazelnut, with a soft note of lemon curd on the tongue.
In the press
95/100 - Mineral-driven aromas of lemon peel, lime sherbet, flint, struck match and chalk. The palate is textural with a creamy mouth-feel and focused acidity, giving notes of grapefruit pith, green apple and orange blossom. Very tense and tightly wound with generous, underlying power. Drink or hold.
Vinification
Handpicked and whole bunch pressed to one, two and three year old French oak puncheons for fermentation by indigenous yeast. Post primary ferment, there was partial MLF but no lees stirring. The wine spent eight months in oak and two months in tank prior to bottling.
Food Match
The vibrancy of this wine would be perfect with the freshness of a salmon gravlax or salmon sashimi.
