Tasting note
Lifted florals, citrus and white peach aromas. Complex lemon sorbet flavours with loads of minerality. Compact, linear and crisp with poise, balance and tension. Finely integrated new and seasoned French oak. Gorgeous.
Viticulture
This vineyard, planted in 2004, is ‘perched’ in the rolling hills just outside Macclesfield. It enjoys free draining sandy loam with ironstone topsoils, combined with exposure to cooling breezes from the south. Sustainable Vineyard practices only.
Vinification
Picked in cool of the early morning, pressed immediately and left to settle in Stainless steel tank at 10 degrees. Lees stirring to enhance tropical characters over 3 days before juice warmed to 16 degrees for temperature controlled 7 day fermentation. Raked off gross lees and settled with bentonite before pre bottling filtration by cross flow.
